Tom Bailey’s Market in Spring Lake has a grill menu


Tom Bailey’s Market in Spring Lake, best known for its choice meats, deli stall and dining, is diversifying.

The market now has a Thursday through Saturday night grill menu that includes sliders ($ 9.95 for three), chicken burgers ($ 9.95), and hot dogs ($ 3.95), all served on paper plates. Seating is mostly outside, at several tables on the patio, with a few more inside. (Customers can bring their own wine or beer.)

The Bailey’s Burger is hearty and served on a brioche bun with lettuce, tomato and onion ($ 8.95, with fries and a side like a creamy coleslaw).

On weekends, owner Chris Deufemia, 39, also makes guacamole for the deli ($ 8.99 a pint).

Here, the butcher cuts, pares and chops meats by hand. Offerings include Niman Ranch pork chops, all-natural lamb, and chicken without hormones or antibiotics. The deli counter offers an assortment of sandwiches; salads like Red Bliss potato ($ 3.89 per pound), green beans ($ 6.99 per pound) and orzo ($ 5.99 per pound); and seasonal specials like gazpacho ($ 4.50 a pint). The fresh cider donuts, prepared daily in the store in the summer, cost 99 cents apiece.

There is also a steam table with hot dishes ?? “whatever the chef wants to do,” Deufemia said.

Despite the name of this burger and the market, there is no Tom Bailey related to the place. According to Mr. Deufemia, who bought it about five years ago, the first owner of the market, which opened in 1997, gave it a combination of his father’s first name and his wife’s maiden name. KELLY FEENEY
